Prune Cake

Main ingredients:

• 1 ½ cups of sugar.

• 2 cups of flour.

• 1 cup of oil.

• 3 large eggs.

• 1 tablespoon of baking powder.

• ½ teaspoon of salt.

• 1 teaspoon of powder cinnamon.

• 1 teaspoon of nutmeg.

• 1 cup of plain yoghurt.

• 1 cup of prunes, cooked and diced.

• 1 teaspoon of vanilla.

 

Preparation

 

Mix the sugar and the oil in a bowl, add the eggs and beat. Sift all the dry ingredients together and add them to the sugar mix alternately with the yogurt while stirring to avoid lumps. Add the prunes, nuts, and vanilla and mix well.

 

Pour the mixture into a buttered mold and bake at medium heat for 50 minutes.
