Chicken with leek and dried prunes

Ingredients:

 

- 300 grs. pitted prunes

- 1 cup boiling water

- 5 tablespoons olive oil

- 8 boneless chicken thighs

- 8 leeks, chopped into 4 cm pieces

- ¼ cup fresh thyme

- ¼ cup lemon juice

- salt and pepper

 

Directions

 

1.- Put prunes in a bowl with boiling water, soak until water is cold. Withdraw prunes and mix with chopped leeks. Keep liquid separately.

 

2.- Preheat oven to medium temperature.

 

3.- In a frying pan, heat 2 tablespoons of oil at medium heat, add chicken and fry until golden color on all sides. Withdraw from heat.

 

4.- In oven skillet make a bed of leek and prunes. Add chicken and thyme. Sprinkle lemon juice, reserved liquid and remaining oil, salt and pepper.

 

5.- Oven bake until chiken and leek are fully cooked.
